Plain Khakhra – For this recipe you just need wheat flour, ghee, salt, cumin seeds and pepper powder (optional) as ingredients. Firstly, you need to knead the flour and make it smooth, then make small balls like you do for making roti, roll them on to make round rotis that are very thin. Roast it evenly from all the sides unless it gets dark brown and crispy. These are plain khakhras that you can store in air tight container and eat for atleast next 2 days.

Masala Khakhra – To make masala khkhra the recipe is all the same like mentioned above for plain khakhras. The only addition to be done is besan, cumin seeds, chilli powder, turmeric powder, asafoetida, low fat milk and oil. Unlike the last process, this time you need to make the dough (mix all the grinded spices in this dough) soft without using water; milk shall be replacing water. Roasting of the rolls should be done on a non-stick tava and cook each of the khakhras on a slow flame till they get brownish. Store in air tight container once they turn crispy!

Methi khakhra – You just need 20 minutes time to prepare methi khakhra. For this, you need 2 table spoons of fresh methi leaves, red chilli powder, ajwain, turmeric powder, cumin seeds and oil. You can also add kasoori methi for better taste. Mix all the mentioned ingredients in a bowl and add little water to it and make the dough stiff. Keep it covered for about 15 minutes and make equal sized balls from the dough. Roll out very thin rotis from the balls and place them one by one on the tawa; keep the flame low and keep pressing to make the khakhras crispy.
